Memas Easy Moist Crockpot Stuffing

Saute 1 jumbo sweet onion and 1/2 cup of chopped celery in 
2 tablespoons of olive oil for  about 2 minutes.
Mix 6 cups of seasoned bread crumbs, 2 eggs beaten, 1 can of cream of chicken soup, 1 1/2 cups of chicken broth, 1 tablespoon of  Memas herb mix, 1 cup of chopped scallions,  1/3rd cup of melted butter, 1/2 cup of milk, dash of pink salt and fresh ground pepper. 
Oil crockpot and put mixture in crockpot on low and cook for 4 hours.  Enjoy!!
Note: This recipe is great if you take your left over
chicken or turkey and add to same recipe before putting in crockpot.

Memas Soup Recipe for week ending 12-20-2014
Simple Winter Vegetable Soup
Chop all veggies into bite site pieces. Add 3 tablespoons of olive oil to heavy pot.
Add all veggies, salt, pepper, stir and cook on high heat for 4 minutes.
Add 5 cups of chicken stock, 3 cups of water and 1/2 cup of tomato sauce.
Simmer for 40 minutes and add 1 tablespoon of memas herb mix and cook for an additional 
10 minutes.  Enjoy with crusty bread!!

Memas Fall Comfort Soup
Start with a heavy pot and add 2 tablespoons of olive oil. 
Wash and chop veggies into bite size pieces.
Wash and chop herbs and set aside until latter.
Add  chopped veggies to heated olive oil in pot, add pink salt, fresh ground pepper, dash of red pepper flakes, 4 cups of chicken stock and 2 cups of veggie stock and 1 cup of water. Stir and cook on medium heat for 45 minutes.  
Add chopped herbs last 5 minutes of cooking. 
Serving suggestion Optional: add scoop of rice to bowl before adding  soup.  Enjoy!!

Memas Kale Potato Soup bag recipe
Or Nappa Cabbage Soup bag recipe
:note recipes are the same except use Nappa instead of Kale for vegetable choice
Put 2 Tablespoons of olive oil in pan and add chopped potatoes and kale, salt, pepper
and 1 teaspoon of mashed garlic. Cook for about 4 minutes and add 5 cups of chicken stock,
2 cups of water, 1 carrot optional and cook on medium heat for 45 minutes. Add the chopped parsley and cook an additional 5 minutes. Turn off heat
and add 1 teaspoon of lemon juice and stir.  Enjoy!!

Roasted Garlic
When you roast garlic it mellows the flavor and is great to spread on hot bread,
 or for hummus, the uses are endless!
Heat oven to 375 degrees
take off loose skins from garlic, cut 1/4 the top of each garlic off. Mix 1/3rd cup of olive oil,  pink salt & fresh ground pepper.  Put  parchment or foil paper on cookie sheet.Place garlic cut side up and pour the olive oil over the garlic and cover pan with foil or a lid and bake for 35 minutes  then take off cover and bake 20 minutes more. Done  when the garlic starts to pop out of skin. Let cool and press garlic from skins and add  the olive oil from the pan. Mix until creamy. 
You can store in fridge for up to a week or freeze.

Memas Soup Recipe for week ending 11-1-2014
Cut veggies in small chunks. Heat 2 tablespoons of Olive Oil in a heavy pot.
Add veggies and stir fry for 5 minutes, add 3 cups of water and 4 cups of chicken stock,
salt, pepper, 1 teaspoon of red pepper flakes, 1 tablespoon of soy sauce, 
5 tablespoons of ketchup, simmer for 40 minutes. Enjoy!!

Memas Stir Fry Bag Recipe for week ending 11-1-2014
Cut veggies in small chunks. Heat 3 tablespoons of Olive Oil, add chopped garlic and veggies,
salt, pepper. Stir fry on high heat for about 3 minutes. Turn down heat, add juice from lemon and continue cooking for 4 minutes or until desired texture. Great if you add cooked rice or pasta the last minute of cooking and 1 tablespoon of soy sauce.

Parsnip and Butter Creme Mashed Potatoes



This is a very simple yet delicious recipe that will keep people begging for more.



  1. Boil about 1 lb of potatoes and 1/2 lb of parnips in water with salt, pepper,
  2. Add 1 tablespoon of olive oil, cook until tender.
  3. Drain, add 3 heaping tablespoons of Amish Butter, 
  4. 1/4th cup of heavy cream. Add more heavy creme to desired thickness. Blend until smooth.

Mema's Recipes of the week (10-11-14)






Roasted Vegetables:

  1. Cut potatoes, carrots, beets, onions in small chunks.
  2. Coat with either coconut oil or olive oil, sea salt and ground pepper. 
  3. Roast in oven at 375 degrees until golden brown or desired color.

Salad Dressing for This Week's Salad Bag:

This is so simple! Go ahead and try it for yourself. Tell me what you think in the comments below.
  1. Mix 1/2 cup of olive oil, 1/3rd cup of rice wine vinegar, sea salt, white pepper, grated garlic.
  2. Chop/slice vegetables and herbs.
  3. Toss with dressing.
  4. Marinate for 30 minutes before eating.

Mema's Soup bag for week ending 9-13


  1. Wash and cut veggies in small pieces. 
  2. In a large pot, add 3 tablespoons of olive oil, salt, pepper, and all veggies. 
  3. Stir fry on high for about 3 minutes then add 4 cups of chicken stock, 3 cups of water, 1 tablespoon of soy sauce, and some rosemary. 
  4. Cook on medium/low heat for about 1 hour. 
Enjoy with some of Cheyenne's gluten free bread!

Mema's Soup Bag for 7-26

  1. Wash and cut veggies in small pieces. 
  2. In pot, add 6 cups of chicken stock, 1 cup of water, salt, pepper, 3 tablespoons of olive oil, chopped veggies, and 3 tablespoons of ketchup. 
  3. Cook on medium heat for 50 minutes. 
Great with the Amish toasted onions on top! Enjoy!!

Mema's Stir Fry Bag for 7-19


This is a simple delish dish!!!
  1. Chop onion and saute for 2 minutes in 1 tablespoon of olive oil 
  2. Add other chopped veggies, salt, pepper, and 1/2 teaspoon of lemon juice.
  3. Saute on high for about 3 to 5 minutes.
Enjoy! You can toss with pasta or rice also.



Mema's Soup Bag for 7-12

  1. Add 2 tablespoons of olive oil to pan, chopped onions, carrots, and potatoes.
  2. Cook for 4 to 5 minutes. 
  3. Add 5 cups of chicken stock, 2 cups water and the rest of the chopped veggies. Salt, pepper. Don't add the chopped scallions until the final 5 minutes of cooking.
  4. Cook for 40 minutes on medium heat, add the scallions and 1 teaspoon of vinegar, and cook for an additional 5 minutes. 
Enjoy!


Mema's Cream of Soup Bag for 6-19 to 6-21


  1. Saute the garlic in 2 tablespoons of oil then add chopped greens, 5 cups of chicken stock, and 1 cup of water.
  2. Cook for 45 minutes. 
  3. Drain the greens and set stock aside. 
  4. Put the greens in a blender or food processor and chop for about 7 seconds. 
  5. Take 1 cup of the chicken stock and add 1 1/2 tablespoons of cornstarch or flour and mix until smooth. 
  6. Pour back in pot and add 2 more cups of the stock back to pot.
  7. Add 1/2 cup of heavy cream and 2 tablespoons of butter, salt, pepper, chopped greens, teaspoon of lemon juice and a dash of paprika. 
  8. Simmer on low for 15 minutes.Keep stirring as soup will thicken. 
Enjoy!

Mema's Soup Bag for 5-29th to 31st

  1. Wash and chop all veggies into bite size pieces. Slice carrots thin. 
  2. Heat 2 tablespoons of olive oil in pan and add the veggies, salt, and pepper. 
  3. Cook while stirring for about 4 minutes. 
  4. Add 1 can of stewed tomatoes, 4 cans of water, 2 cups of vegetable stock, 1 teaspoon of sugar, and 1 tablespoon of butter.
  5. Cook on medium heat for about 50 minutes.

Mema's Stir Fry Bag for 5-29th to 31st

  1. Clean all veggies and cut into bite size pieces. 
  2. Heat 2 tablespoons of olive oil in pan.
  3. Add veggies, salt, pepper, juice from lemon, and 1/2 teaspoon of grated lemon peel.
  4. Cook and stir for about 15 to 20 minutes.
  5. Add 2 tablespoons of lite soy sauce and turn off heat. Stir before serving.

Mema's Memorial Weekend Cold Slaw



  1. Slice thin 2 cups of each, savoy cabbage and red cabbage.
  2. Slice around the same in size 2 rainbow carrots, 1 sweet onion.
  3. Heat 5 tablespoons of water and mix 2 tablespoons of sugar in water.
  4. Pour over sliced veggies and toss well. Add a dash of pink salt, 1/2 teaspoon of fine ground red pepper corns, toss. 
  5. Mix 1/2 cup of mayo with 3 tablespoons of apple cider vinegar and 2 tablespoons of lemon juice. 
  6. Pour over veggies and mix well.
  7. Let marinate for 2 hours before eating.

Mema's Soup Bag Recipe for week (5-15,16 and 17)



  1. Wash and Chop Vegetables in bite site pieces. 
  2. Heat 2 tablespoons of olive oil in pot.
  3. Add vegetables, dash of salt, pepper and dash of hot pepper flakes. 
  4. Cook and stir veggies for about 5 minutes. 
  5. Add 6 cups of chicken stock and 1 tablespoon of Amish butter.
  6. Cook for 45 minutes. 
  7. Turn off heat and stir in 1 cup of cooked white or brown rice.

Ingredients and Recipes for Mema's Organic Quick Bags







Lamb Meatballs- Great Appetizer for Easter!


You will need: 
  • 1lb of ground lamb 
  • 1 egg 
  • 3 tsp of milk
  • 1/3rd cup of seasoned breadcrumbs
  • 1 tsp of salt
  • 1 chopped sweet onion
  • 1 tsp of minced garlic
  1. Heat 1/2 tablespoon of olive oil then add the chopped onions and the garlic. 
  2. Cook for 1+ minutes, just until onion is a little soft. 
  3. In a bowl mix the egg, milk, breadcrumbs & salt together. 
  4. Add the cooked onions and garlic. 
  5. Add the ground lamb by chunks of meat, not working it much so that the meatballs will be more tender. 
  6. Press everything together gently turning it. 
  7. Spread mixture in a 6" x 4" pan, cut into squares and take out sections, roll into balls that are about the same size. 
  8. Heat 1 tablespoon of olive oil and brown meatballs on both sides for about 3 minutes.
  9. Add 1/2 jar of Amish pasta sauce, 1 bayleaf, move meatballs around to coat all sides, turn down heat and let cook for an additional 25 minutes on low. 
  10. Add fresh chopped basil.

Stir Fry Recipe for 4-10, 2014

So quick and delish!!
  1. Slice veggies in small pieces. Heat 2 tablespoons of olive oil, add chopped veggies, salt, pepper and cook for 5 minutes. 
  2. Add 1 teaspoon of lemon juice, toss and Enjoy!


Soup Bag Recipe for 4-3, 2014

  1. Chop veggies small. Heat 2 tablespoons of olive oil and add chopped veggies, cook for 5 minutes. 
  2. Add 2 cups of tomato sauce, 6 cups of water, salt, pepper. 
  3. Cook on medium heat for 45 minutes. 
  4. Add 2 tablespoons of lemon juice and stir. 
  5. Add chopped scallions.
  6. Pour soup in cup then add 1 heaping spoon of rice in center. 
Enjoy!

Quick Side Dish for 3-27 to 3-29, 2014
Romanesco with coconut milk


  1. Heat 2 tablespoons of olive oil, cook chopped onion and garlic for about 1 minute.
  2. Add the romanesco, salt, pepper, dash of red pepper flakes and saute for about 4 minutes. 
  3. Add 1/4th cup of coconut milk, 1/4th cup of melted butter, dash of curry powder and cook for an additional 4 to 5 minutes.
  4. Add chopped scallions, cilantro, and optional is to add some nuts of your choice (peanuts, pine nuts).
Enjoy!

Soup Bag for 3-20 to 3-22, 2014

  1. Heat 2 tablespoons of olive oil. Add chopped veggies and cook for about 5 minutes. 
  2. Add 5 cups of chicken stock and 2 cups of water, salt, pepper, 1 cup of tomato sauce or amish pasta sauce, 1 tablespoon of hot sauce or pepper sauce. 
  3. Cook for 40 minutes. 
  4. Add your choice of chopped fresh herbs & turn off heat. 
Enjoy!

Stir Fry Bag for 3-20 to 3-22, 2014

  1. Heat 2 tablespoons of coconut oil or olive oil and add chopped garlic and onion.
  2. Cook for 1 minute and add the veggies, salt, pepper, 1 teaspoon of lemon juice, 4 tablespoons of soy sauce, and 4 tablespoons of water.
  3. Cook until desired firmness. 
Great over quinoa! Enjoy!

Stir Fry Bag for 3-13 to 3-15, 2014

  1. Chop veggies in small chunks and cut some of the leaves in thin strips. 
  2. Heat 2 tablespoons of coconut oil in pan, saute the onion and garlic first then add veggies, salt, pepper, 5 tablespoons of chicken stock. 
  3. Stir fry until liquid is absorbed. 
  4. Turn off heat and add the sprouts. 
Great over rice! Enjoy!

Mema's Homemade Salsa Recipe


  1. Add shallot, cilantro and garlic in a food processor. Chop for about 5 seconds. 
  2. Add sweet peppers, tomatoes, lime juice, 3 tablespoons of apple cider vinegar, memas special spice blend, and 1/2 teaspoon of grated lime peel. 
  3. Process 10 seconds.

Recipe for Soup Bag (2/27/14)

Cream of Kale Soup:
  1. Heat 2 tablespoons of olive oil in pot, add chopped kale, cook for 4 minutes.
  2. Add chopped potatoes, salt, pepper, 4 cups of chicken stock, and 1 cup of dry white wine.
  3. Cook for 40 minutes. 
  4. Drain and set liquid aside.
  5. Process the vegetables in processor until smooth. 
  6. Add back to pot with liquid and 1 cup of heavy cream, 2 tablespoons of butter, stir and cook for 5 minutes on low. 
  7. Add 1/2 cup of grated cheese, parm or cheddar.
  8. Stir until starts to melt. 
Enjoy!
